We had some neighbor friends over for dinner tonight. The guys watched football while us ladies stood in the kitchen and drank wine. And at one point we sat down to dinner with 5 kids and 4 adults.
We even had to bring in my craft desk chair so we could all fit around the table.
It was just the kind of time I love to spend.
Our neighbors are good people and also have two boys who play well with ours.
Except for when they were doing laps around our living room.
But it was all good.
Including the steak and salmon that Tim grilled and the cookies I we made for dessert…
Another friend of mine sold me some very local honey (as in from a neighborhood less than 2 miles from us) the other day and mentioned that it can help with allergies and that she uses it for baking. So that I did.
I also used less than any recipe would call for, as is my normal practice now.
I do so love to bake…
And as you can see, the boys “helped”.
Yeah, they love to “bake” too…
I did not take any pictures of the finished product and even though we did not eat them all, I’m too lazy to take more pics now.
Just know they are really, really tasty.
So, here’s the recipe for you! This made 3 dozen small-ish cookies so if you wanted more you could double the recipe.
Please make some and enjoy.
Ingredients:
1 stick of butter softened
1/3 cup honey
1/2 cup packed brown sugar
1 large egg
1/2 tsp. vanilla
1 cup whole wheat flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp. powdered ginger
1 1/4 cups quick rolled oats
1 cup semi-sweet chocolate chips (plus more if you have two little boys helping)
You can also add raisins or walnuts if you so desire.
Directions:
Preheat oven to 375 degrees.
Beat butter and sugars (including honey) on low speed until softened. Mix in eggs and vanilla. Add flour, baking soda and baking powder and spices. Mix on low speed until combined. Add oats, chips and other nuts and raisins if using and mix by hand. Drop dough by rounded tablespoons on pan lined with parchment paper or greased, about 1.5″ apart. Bake for 11-13 minutes, until edges are golden brown and centers are pale and soft. Cool cookies on cooling rack.
