Visions of Pancakes Danced in Her Head

Last Spring a terrible thing happened in our town. They closed and bull dozed The Country Kitchen. Now, if you have ever eaten at The Country Kitchen, you know exactly what a TRAGEDY this is. For those of you who never had the pleasure, first of all, I am sorry. Secondly, let me just tell you they made THE BEST pancakes, EVER!

See Saturday breakfast is a big deal around here. Many times it’s homemade a la Chez Tim, but on the mornings that he doesn’t feel like using his “mad breakfast skillz” we find somewhere else to eat and it used to be The Country Kitchen. We would also occasionally go on Sunday, after church, where we would see many of our fellow parishioners.

Anyway, we happened in there one weekend last May and found out via eavesdropping, that they were closing after Mother’s Day. The waitress had no idea that she was ruining my week and the rest of my breakfast life.
I almost choked on my perfectly seasoned hashbrowns. I looked at Tim and believe I said “What the HE** did she just say????” Thankfully we had come in that weekend because the realization just hit us that it was our LAST EVER opportunity to eat the most fantastic pancakes EVER. Did I say that already?

We finished eating and went to speak to the owners that greeted us with a smile every time we visited.

Why, oh why would you do this to me??

Okay, I didn’t really say that, but we did express our sorrow over the fact that we would not be able to consume copious amounts of those pancakes again. And then I had a horrible flashback of the times I missed out on them when I was trying to eat healthier and we would go there and I would order the “Healthy Breakfast” that did not include ANY of those pancakes. Stupid, stupid me. I needed more time to make up for those lost breakfasts!!

Please, oh please! I begged, I pleaded.

It didn’t work. They were retiring and selling the land to a developer. They’d had enough of this flipping place (pun intended). Obviously they did not value our relationship. I knew this for sure when she rubbed salt in my wound by saying that their recipe was patented and so therefore there was absolutely NO WAY I would EVER taste that exact pancake heaven again. (Insert explative here…)

All of this leads up to the fact that this morning my husband walked in and said he wanted to go out to breakfast and reality struck all over again. I layed there with Little G next to me, dreaming of those pancakes, wishing I could get in the car and drive there and have them – now. My mouth watered until my brain reminded it that the Panera Bread was going to be opening soon, in place of MY Country Kitchen. Sorry, but not nearly as mouth-watering.

Oh, and just so you locals know, I blame ALL of this on the Cowboys. Their new stadium is going up down the road and I am sure that is why the owners got top dollar for their property and it clinched the deal for them to sell and move on. So, it’s all Jerry Jones’ fault, just so we all knew who to blame for the fact that I will NEVER get to taste my beloved Country Kitchen pancakes EVER again. Thanks a lot, Jerry, thanks a lot.
