I miss my childhood meals.
Well, except for liver and onions. Yeah, those nights I was totally good with a glass of tea and whatever fruit salad and/or vegetable was served.
And yes, the sweet tea was excellent. Sometimes it took all day to make it. Mom would put the sun tea jar out on the dark brown bench in the backyard, right where the bright rays would warm it for most of the day. Then she would add just enough sugar and pour it over ice -perfectly chilled and delicious on a hot Texas day.
Some of my favorite meals were fried chicken, crunchy, tender and juicy or spaghetti with homemade meat sauce. I loved the crusty garlic bread that was served and the salad with Italian dressing.
Another favorite was meatball stroganoff. Oh my goodness, so tasty. I loved the big, flat noodles and the tasty sauce. And you can’t really go wrong with meatballs.
I wasn’t too fond of stuffed peppers and would just eat the rice/meat mixture from inside but now I LOVE bell peppers and I wish I had all of them back so I could eat them now. I bet they were really good.
I also liked pizza night, which at least one of my older brother’s would usually hang around so they could partake too. Sometimes it was homemade pizza but we would get delivery on occasion, especially as I got older.
We had dessert pretty much every night. Brownies or ice cream with “magic shell” and sometimes Mom’s apple pie. She would bake it “Dutch” style with yummy crumbles of flour, sugar and butter covering the top. After it cooled off a bit I would saunter up to the counter and pull a few of those sugary pieces off and pop them in my mouth – so tasty and warm.
And I cannot forget breakfast which many times, after church, was doughnuts. However, my dad also frequently made breakfast on the weekends. Once I got a little older I was in charge of the toast. He would scramble the eggs and fry up the bacon while I watched the toaster and then spread each slice with butter after it popped up, startling me without fail. He showed me how to place the pieces with the buttered side facing each other so that they would say warm and “share” the creamy spread.
I also fondly remember one of my favorite lunches that my mom used to make for me. She called them “little pizzas”. She simply took an English muffin and spread each side with pizza sauce, then put mozzarella and cheese on top and put them in the broiler for a few minutes. I still make this for my kids.
After reading this I think I might be part Italian.
