Almond Chocolate Cherry Clusters

I like to eat chocolate.

A lot.

I also really like things that only take a few ingredients to make.

Like these:

I actually found this little recipe in a magazine a few years ago and adapted it just a bit.  There’s not much you can change on a three-ingredient recipe but I managed it. 😉

I like a little chocolate in the evening after dinner and these are perfectly satisfying for my sweet tooth.  They give you a little extra zing with the dried cherries and last I heard, almonds and even dark chocolate are pretty good for you.  So go ahead, have two!  (not that I have done that had three or anything…)

First, gather your three ingredients:

6 oz. dark chocolate 60% – 70% cocoa
1/2 cup dried cherries
1 cup sliced almonds

Next, line a baking sheet with wax paper.

Now, coarsely chop the cherries and then mix them together with the almonds in a bowl.  Melt the chocolate over a double boiler or if you are lazy-ish like me, in the microwave, until melted.  Dump the cherry/almond mixer into the melted chocolate and mix.

Take a spoon and plop spoonfuls onto the wax paper in cluster form.  Try not to lick the spoon too much (good luck with that).

Refigerate for 30 minutes to an hour and BAM! Almond chocolate cherry clusters FTW!

Store in fridge in air-tight container for up to a week but I promise they WILL NOT last that long.

This recipe only makes about 14-16 so you may want to double… just a suggestion. 🙂

    These look so amazing! I will be trying this soon. Ever since I made cathedral cookies (that’s what people call them), I cannot stop mixing things with chocolate to make a roll or do it clusters like this. It’s so awesome to make your own candy like this for your family or as gifts! Delish!
